Moroccan Chickpea Salad

Moroccan Chickpea Salad

Salad

Ingredients

1 stalk celery, diced
1 green pepper, diced
1 med. tomato, diced
1 med. onion or 6 green onions, diced
1 Can chickpeas, drained (19oz)
1/2 Cup of feta cheese

Dressing

Ingredients

2 Tablespoon olive oil
3 Tablespoon red wine vinegar
2 Tablespoon fresh lemon juice (about 1/2 lemon)
1 Tablespoon fresh parsley
1 Teaspoon fresh mint
1 Tablespoon & 1 tsp dried ground cumin
salt & pepper to taste

Preparation

  1. Toss diced vegetables & drained chickpeas.
  2. Stir dressing ingredients together. (Dressing will look thick and "muddy").
  3. Pour over veggies and toss.

Nutritional Information

Nutrients per serving (based on 4 servings): 252 calories, 13 g fat, 9 g protein, 7 g fiber, 25 g carbohydrates. Excellent source of vitamin C. Good source of iron, vitamin A, vitamin E, vitamin B12.

Hey, just was inspired to make this for lunch with items I had in my fridge (was missing some ingredients). Used Sun Dried Tomatoes vs. fresh, cucs vs. celery, basil and argula vs. mint and parsley, etc.. Needless to say, it turned out delicious. Next time I will follow the recipe but this is the way I cook! Enjoy.

Fantastic salad. I didn't have any tomatoes so used canned diced with hot peppers. Very tasty!

I made this and it came out really great. I added cucumbers and used red & yellow peppers to add more taste. I also tripled the amount of celery,mint, and parsley.

It lasts quite well in the fridge. I think we've had it in there for a few days, as we often pack it for lunches. Everything was still nice and crunchy.

Very yummy! We made this as a light dinner main course with garlic bread. It was probably better suited as a lunch main course, as it was a little light. I will definitely make again as a side dish!

Re: Annie Yes, there are carrots in the photo. My wife (and I) were the testers for this recipe and we added carrots ourselves. Perhaps we should have taken the photo without them so that it better reflected the actual ingredient list!

Mde this a week ago. I think it needed to sit overnight for the chickpeas to absorb the flavor. My kids weren't too fussy on it. I think I could sub chicken for the chick peas and they would be happier. Overall, very easy and tasty.

This is very tasty and satisfying. I used a sweet onion instead as I am not fond of a strong tasting onion. Its easy to make Loved it!!!!

I substituted mixed beans the second time and preferred that to the full chick pea version..but we love it and will make it over and over again.

I also added carrots to my salad for color like the pictures shows. Add dressing one hour approxiametely before serving I would say because I added it the night before and my salad was wilted looking (the tomatoes). Yum.....
