Cheese and Corn Quesadillas

Quesadillas are a popular "sandwich" and very easy to make. A recipe from Bonnie Stern's University Survival 101 Cooking Class.

Cheese and Corn Quesadillas

Ingredients

1 1/2 Cup grated cheese (mozzarella, smoked mozzarella, cheddar, swiss, etc)
1 Teaspoon pureed chipotles or one finely chopped jalapeno or any hot sauce - optional
1 Cup fresh or frozen corn niblets or any diced cooked vegetable, optional
1/4 Cup chopped fresh cilantro or fresh basil or green onions
10 six inch flour tortillas

Preparation

  1. Combine cheese with chilies, corn and cilantro.
  2. Arrange tortillas on work surface in a single layer. Spoon mixture on one half of each tortilla. Fold other half over filling and press together firmly.
  3. In a panini maker, grill pan or skillet, grill quesadillas about 1 to 2 minutes per side until cheese melts and tortillas are browned. Cut each tortilla in thirds. (You can also place these in a single layer on a baking sheet and bake in the oven at 400F for about 10 minutes until browned.)

Hints & Tips

You can also use the tortillas for a pizza base: bake just the tortillas right on the oven racks in a single layer at 400F for about 5 minutes until lightly browned. Place on a baking sheet in a single layer and top with toppings. Bake again for 5 to 8 minutes just until cheese melts.
