Quesadillas are a popular "sandwich" and very easy to make. A recipe from Bonnie Stern's University Survival 101 Cooking Class.
| 1 1/2 Cup | grated cheese (mozzarella, smoked mozzarella, cheddar, swiss, etc) |
| 1 Teaspoon | pureed chipotles or one finely chopped jalapeno or any hot sauce - optional |
| 1 Cup | fresh or frozen corn niblets or any diced cooked vegetable, optional |
| 1/4 Cup | chopped fresh cilantro or fresh basil or green onions |
| 10 | six inch flour tortillas |
You can also use the tortillas for a pizza base: bake just the tortillas right on the oven racks in a single layer at 400F for about 5 minutes until lightly browned. Place on a baking sheet in a single layer and top with toppings. Bake again for 5 to 8 minutes just until cheese melts.
