This is a lovely, comforting slow-cooked dish. Turkey thighs are well suited to long slow cooking. Chicken thighs could be substituted. Pancetta is used instead of bacon but either would work well.

Toasted sunflower seeds replace pine nuts and produce a similar flavour but with a little more crunch (and a lot less cost). This pesto would be equally delicious served on grilled vegetables, as a spread for sandwiches or used in vinaigrettes or dressings.

This sticky sweet glaze is delicious on chicken. Use a quality vinegar in this recipe for best results. This recipe requires a large oven-safe skillet. If you don’t have one large enough to accommodate all the chicken, use two smaller skillets.

Festive Party Brownies

To make removing and cutting the brownies easier place the cooled brownies in the pan into the freezer for about 30 minutes to harden slightly. Save any leftover brownie pieces left after cutting for ice cream topping. They will stay fresh in a freezer container for up to 1 month.
