Roquefort is a tangy blue cheese that is often found in Cobb salad. Here, it is cooked in the chicken burgers for extra flavour but more can be added as a garnish, if desired. Recipe can be prepared without Roquefort or substitute with a milder blue cheese such as Danish Blue or coarsely grated sharp cheddar.
