Chicken Paillard with Pesto and Egg Noodles

Paillard is a term used to describe a cut of meat, often chicken, beef or pork, that has been pounded until very thin and then cooked quickly over high heat. Many supermarkets carry chicken cutlets, which are chicken breasts that have already been pounded to an even thickness. Use these if you can, to shorten prep time.

Flank Steak with Buttermilk Potatoes and Chipotle Sauce

Chipotle peppers are a great way to add intense smoky flavour and some heat to a quick cook dish. Buttermilk mashed potatoes have less fat than traditional milk mashed potatoes and the slight tang works beautifully with the spicy steak.

Guacamole

Red bell pepper adds colour and crunch to this guacamole. Mound the guacamole on a lettuce-lined platter and surround it with bowls of black olives, cilantro, and corn chips. Watch it disappear!
